Lemon bars 




Ingredients
1 cup of butter , 1/2 white sugar , 2 cups all purpose flour, 4 eggs , 1 1/2 white sugar 
1/4 all purpose flour, 2 lemons juiced and a 9 x 13 pan 

Directions
1. Preheat the oven to 350 degree F( 175 degree C) 
2. In a medium bowl , blend together softened butter, 2 cups of flour and 1/2 of sugar. Press into the bottom of a ungreased 9x13.
3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together 1 1/2 sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
4. Bake for additional 20 minutes in preheated oven. The bars will firm up as they cool

Easy brownies

         


You could try these. Also, if you have shortening, you can use that in place of the butter in baked goods. 

1/2 cup vegetable oil 
1 cup sugar 
1 teaspoon vanilla 
2 large eggs 
1/4 teaspoon baking powder 
1/3 cup cocoa powder 
1/4 teaspoon salt 
1/2 cup flour 
Directions 

Preheat oven to 350°. 
Mix oil and sugar until well blended. 
Add eggs and vanilla; stir just until blended. 
Mix all dry ingredients in a separate bowl. 
Stir dry ingredients into the oil/sugar mixture. 
Pour into greased 9 x 9 square pan. 
Bake for 20 minutes or until sides just start to pull away from the pan. 

Cool completely before cutting.
